They’re both harvested and bottled right here in California, through regenerative methods that improve soil health and capture the nuance of the land. We use them multiple times a day, in everything from salad dressings to morning porridge.

Persimmon Vinegar
Our Persimmon Vinegar is the shining star. It bursts with flavor, adding brightness to anything it touches. It is handmade by White Buffalo Land Trust with Fuyu & Hachiya Persimmons grown by farmers dedicated to improving soil health. They’re an amazing group of people devoted to regenerative land stewardship, and this Vinegar stands for that. The delicately sweet and tart flavor gets better and better with time, and it’s perfect on salads, marinades, or as a shrub.
Heritage Extra Virgin Olive Oil
The organic Olives in our Olive Oil are picked by hand and cold-pressed immediately to ensure crispness and rich antioxidant and polyphenol content. It contains our famous blend of Mission, Picual, Leccino, Pendolino, and Frantoio Olive varietals, which makes for a vibrant, peppery Oil balanced by softer fruit notes. Each bottle is harvested by Philip Asquith — a fourth-generation Olive farmer. Phil’s trees were grown from cuttings taken from some of the oldest and most renowned Olive groves in Europe, which produce Oils not easily found in this part of the world.
SOURCING
Our olives are grown on a multi-generational family-run farm, and are hand-selected at peak ripeness then pressed immediately to ensure critical freshness. This farm operates with organic, sustainable and biodynamic principles, honoring the link between people, the land, and the community. The paste from pressing olives is turned into natural compost tea to fertilize the trees and benefit pollinators. They also irrigate their groves with water from their pond, which is rich in soil-beneficial micro-organisms.
Flamingo Estate is a home and garden. In the 1940's, high atop the hills of Los Angeles, hidden by a lush orchard and dense gardens, the flamingo-pink estate became a hedonistic enclave of sun-worship, folk mythologies, and psychedelic remedies — a secret haven for wild alchemy in the City of Angels.
